Sheldon's Barbecued Fish

My father in law goes to Mexico bass fishing every year and comes home with tons of fish. His favorite way to fix it is on the grill. He starts with a large filet and butters it up real good. Then he seasons it with season salt. The key is to only flip it once. The more you have to touch it the more it crumbles. Just keep an eye on it. The butter causes the fire to flare up. Give it a try it is really good!!
