My Grandma made the best fried fish. My Grandpa, brother and I spent a lot of time fishing when I was a kid. We mostly caught catfish. Most of them were channel cats between 3 and 6 pounds. The fillets were big so it's important to slice the fillets into strips so they will cook through. Feel around the fillet to make sure all the bones are out. Dip the fillet in egg, then bread it with cracker crumbs. Fry it golden on both sides and give it a little salt, and enjoy.
