Green Chili

Green chili is one of my all time favorite things to eat. Start with a pork roast, you can use beef, deer, elk, dove, rabbit or anything else. Salt and pepper the roast and add some onion and garlic powder to the meat. Put a little water in the crock pot, cut up an onion and 3 or 4 cloves of garlic. Let it cook for 3 or 4 hours. When its tender taste it and see if it has enough salt and seasonings. If it needs more add more. If you have fresh roasted green chilies use them, they are the best. If not add a couple of cans of diced green chilies. Thicken it with a little flour or corn starch and eat it with some cheese and a flour tortillas. Its making me hungry just thinking about it.
